Kid Approved Hamburger Mac N Cheese

 

Beef Mix:
 
1 teaspoon olive oil
1 pound ground beef 
1 chopped onion 
2 minced garlic cloves 
2 1/2 cups chicken or beef broth
1 cup water
3/4 cup ketchup
1/3 cup tomato paste 
1 1/2 tsp sugar
1 tsp Worcestershire sauce (optional)
Salt and pepper to taste
 
Cheese Sauce:
 
3 tablespoons butter
3 tablespoons flour
1 cup milk
2 cups grated  cheddar cheese
 
*Heat your olive oil in large skillet over medium-high heat and cook your ground beef. As you cook it make sure you are breaking it into small pieces.
*While about half way cooked add in your onion and mixed garlic, continue to cook all the way through. If there is a lot of access water drain slightly.
*Let’s add in our broth, water, ketchup, tomato paste, salt and pepper, and combine together. (Hack- if you have Worcestershire sauce add in a tsp). 
*Place your rotini into the skillet and bring to a boil. Immediately after reduce to simmer and cook for 12 minutes when pasta is cooked through and liquid has reduced.
*In a separate saucepan, melt butter.
Add flour and whisk for creating a roux. (It’ll resemble a thick paste).
*Add in your milk and whisk until smooth and thick. (4-5 minutes apx). 
*Remove from heat add your cheese and add cheese sauce to noodle mix!
*Enjoy!
Cook until sauce begins to thicken, about 4-5 minutes. Remove from heat and add cheese. Stir until cheese is melted and sauce is smooth.
